This Chef Is Rethinking One of America's Most Underappreciated Foods

Ravi Kapur loves Spam. Obviously. Who doesn't? But the Hawaiian-born chef of the Liholiho Yacht Club in San Francisco has brought his admiration for the iconic, imperishable canned delicacy to a higher plane. The restaurant, barely two months old, sent tremors through the Bay Area culinary scene while still in fetal form; a series of pop-ups, most recently at State Bird Provisions, showed off Kapur's playful, self-styled cooking to a city not easily overawed. But obviously, his crowning achievement was making his own Spam.

"I grew up in Hawaii," Kapur says, "and we loved Spam. We literally buy something like seven million pounds of it a year. I never knew it had a bad rap here." In Hawaii, Spam is most frequently served as sushi; an attractively squared-off and spongy pink piece resting atop sticky rice, the whole wrapped with crisp dried seaweed, aka nori. (Presumably, when they eat it at home, they just peel the top off and use a spoon the way I do.) At the restaurant, Kapur serves a deconstructed version of the dish, dispensing with the tight wrapping and adding furikake, or toasted sesame seeds mixed with finely minced nori on top, along with minced scallions, pickled cucumbers, and togarashi, a medium-hot Japanese chile. Which is all fine.

But how does he make his own Spam?

"The thing with Spam is that it really isn't that weird. It's basically just pork shoulder and ham, ground up finely, emulsified, and cooked," Kapur says. The chef uses about nine parts of pork shoulder to one part of ham, packs them into vacuum bags, and presses the things flat in a hotel pan to mimic the appealing rectangular shape of the real thing. ("It doesn't have round edges, but it's pretty close," he says in apology.) The bottom of the dish is fine sticky Calrose rice, similar to the kind used in sushi. There's a spicy aioli with tamari, sriracha, and sesame oil; then the spam without a capital "S" is seared brown on a flat plancha griddle and glazed under the broiler with tamari, brown sugar, and sesame oil to make it a little sweeter—and prettier, too. The dish is fantastic, representative of the sprightly, potent style of Kapur's work at the Liholiho Yacht Club, and a fitting tribute to the apex of American pork processing technology, a product invented for the military, but subsequently an inspiration to millions of hungry bachelors, stoners, soldiers, hermits, and Hawaiians. And now, hopefully, to Bay Area gourmands. It's certainly an inspiration to me.

Liholiho Yacht Club moved temporarily into the Mission as a pop-up during our ongoing, seemingly everlasting Pandemic Times, and I finally got to try it. Reservations aren’t easy to come by at this gem.  It’s moving back to its original space soon — not in the Mission, sadly, but they’re keeping the space on 18th Street and reopening with a new-but-similar concept. I’m told it will be called Good Good Culture Club, which will skew towards Filipino and Laotian flavors. 

This is good and bad news. I’m very sad to see Liholiho go, but really looking forward to this next project. The current incarnation is Hawaiian in its roots, and although I was grateful not to see a loco moco lunch plate on the menu, there is a Spam dish. But Spam as you’ve never had it (or maybe that’s just me.) 

We sat outdoors on the festive, rainbow-splashed rooftop patio on a blisteringly cold night, despite the heat lamps.  Booze helped.  My friend had The Poolboy, a gorgeous spirit green with mezcal, lemon, passionfruit, gentian, yellow chartreuse, and blue spirulina.  I tasted it and it was very good, lightly sweet, delicate.  I had an As You Wish, with cocoa nib-infused bourbon, black sesame syrup, cardamaro, chocolate walnut bitters, and rocks.  It was an assertive, strong and manly drink.  I womaned up and downed it.

For eats, we started out with Kennebec chips and kimchi dip.

I’ve never know why or when Kennebec potatoes became the “It Girl” of the potato world on so many menus. Apparently they’re the most ubiquitous potatoes used for fries and chips, and have been around since the 1940s. Nonetheless, these were really good chips, served here with their delightful kimchi dip, flecked with furikake. The chips offered a great contrast between the crunchy, diaphanous potatoes and the creamy dip. 

We got the tuna poke, which we also scooped up with the chips.

The tuna was sparklingly fresh, with perfect avocado chunks, slivered radish, and a tamari sesame oil.

Next was quite possibly the best-goddamned bite I’ve had during the entire Covid-19 extravaganza, and perhaps even into the Before Times: 

Smoked beef belly with an oyster sauce rub, in a steamed poppyseed bun, with pickled watermelon radish and miso aioli.

Melt-in-yer-mouth, the puffy bao snuggled the rich, fatty- but-not-too, super smoky beef gently, gently.  My mouth swooned and thanked me. We split this and I totally resented my dining companion for it.  I could have had two of my own and gone home happy.

Next, the Spam.

Pickled spam steak was kind of a revelation, again with that lovely smokiness!  To its credit, this was more ham-like than Spammy, with a lovely, tart bite from the pickling.  Crunchy/cool pickles with togarashi graced each bite.  Certainly the best Spam prep I’ve ever had.

We also split a whole fried petrale sole.

Ultra crispy and light, with delicate white meat inside, the fish luxuriated in a coconut milk marinade and turmeric salt, and was enhanced but not overshadowed by the cilantro/ginger sauce that accompanied it.

We also had a side of cabbage roasted with miso and fermented turnip and salted daikon: Buttery, sweet, nutty, and homey.

I’m not that into desserts but my friend really is so we got two: the pandan ice cream sandwich with a pistachio-pandan shell and vanilla-pandan swirl ice cream.

The second was like a tiny baked “Hawaii” with strawberry sorbet, black sesame cake, vanilla cheesecake, black sesame crumble, and fresh strawberries. Pic of it cut open, because LOOK HOW PRETTY.

Both were very good, but I particularly loved the extreme crunch factor of the sandwich.  I’m also told that pandan, a Southeast Asian tropical plant, can be very aromatic, yet the ice cream was well-balanced.

I found Liholiho’s food rustic but refined: The textures, flavors and presentation elevate this type of cuisine, even as most of the food was homey, satisfying comfort food. And there is so much more on the menu to explore, and so little time to do it, at least while Liholiho remains in our neighborhood.  I’m dying to try the sashimi, the pork belly, crispy onigiri, St. Louis spareribs, their salads, and mochi.  They offer many other intriguing cocktails, carafes/bottles of wine and bubbles, and beer and sake.

Yay! We love LihoLiho and finally visited their Mission location, too. Just a quick note as someone with Hawaii roots and who runs a restaurant with loco moco and spam on the menu: these are really important cultural foods and shouldn’t ever count against the character of a menu that claims influence from Hawaii. When everyone, high and low, grows up eating a set of particular dishes, it’s not a trope to see it on a menu, it’s there as a celebration of the culture.

There are no yachts to be found at its current Mission residence, but hordes of locals and enthusiasts remain quite eager to book passage on Liholiho's love boat. Fusing Californian technique with the flavors of Chef/owner Ravi Kapur’s native Hawaii, this earthy, bustling, and airy space is known for strong cocktails, shareable plates, and near-impossible reservations. Walk-ins are welcome, but make sure you arrive in time to beat the crowds. Pivoted around a large, open kitchen, the dining room hums with groups savoring the likes of short rib bao or whole fried fish marinated with coconut and turmeric. If you turn your nose up at Spam try the house-made version. It just might convert you.

Calling this a Hawaiian restaurant would be like calling Lady Gaga a “talented singer.” True—and yet not really the whole story. Because while Oahu native Ravi Kapur’s spins on tuna poke and pork belly are delicious riffs on the 50th state’s signatures, what really sets Liholiho apart is the chef’s ability to pull from NorCal, Japanese, Indian, and Korean playbooks. These influences are mashed together into dishes that feel both excitingly new and so spot-on it’s like they were, well, born this way. Think festive, shareable dishes like lettuce cups of fried oyster and beef carpaccio, beef tongue–filled poppy-seed steam buns, and humongous mains like beef ribs in kimchi-chili sauce or fried cornish game hen with flowering kale. The minimalist light fixtures and blonde-wood booths give off California cool. No wonder Kapur’s mom, whose face beams from behind the bar in a giant black-and-white photograph, sports such a big smile.

Unless you’re in Hawaii, Hawaiian cuisine isn’t really common. So, it’s no surprise that the Hawaiian-inspired Liholiho Yacht Club is one of the hottest tickets in town.

Located in the Lower Nob Hill neighborhood, the restaurant occupies a beautiful space – an exposed brick wall, high ceilings and funky floor tiles. Very Instagrammable! The front of the restaurant houses a long bar which features large a black and white photo of a young woman (the Chef and Owner’s mom from back in the day – cue the aww’s!) behind the counter.

Reservations open up at midnight 30 days prior to the date and are highly recommended. We were online exactly 30 days prior but the best we could do was a 9:30pm reservation so the tables go fast. But not to worry, they save a third of their restaurant for walk-ins.

Liholiho Yacht Club offers a fantastic selection of cocktails. They have a separate cocktail bar downstairs called Louie’s Gen-Gen Room which is a must-visit if cocktails are your thing. We dropped in the night before and loved the cozy space which features a completely different cocktail and food menu. Like the restaurant, reservations are recommended if you plan on dropping by.

The restaurant is the brainchild of Hawaiian-born Chef Ravi Kapur who started Liholiho as a pop-up around the city. For this venture, he partnered with Allyson Jossel and Jeff Hanak from Nopa, one of the essential restaurants of the city.

While Liholiho isn’t a white tablecloth kinda place, the price points are on the high end so a meal here will set you back a pretty penny. But then again, we quickly found out that everything in SF is really expensive.

The extensive menu that Chef Ravi has created is divided into three sections: smaller snacks like popcorn and duck hearts (ranging from $5.75 to $17.25), larger plates (from $14.75 for a salad all the way to $88.88 for a wagyu striploin) and extra large plates which are meant for sharing (from $32.25 for the country pork steak to $42.75 for the grilled short rib).

We started out with the Tuna Poke – sesame oil, radish, nori cracker ($17.25). Poke (marinated raw fish) is quintessential Hawaiian fare which has been gaining a ton of traction. It seems like poke joints (along with sushi burritos) are popping up on every corner these days (or at least in Toronto). I’m still not sick of it yet!

I really enjoyed Liholiho’s version which consists of saucy chunks of tuna sitting on top of a large seaweed cracker. You definitely get the punch of sesame oil in the fish and the drizzled spicy aioli on top was a nice finishing touch. I also loved the contrast between the tender chunks of tuna and the crunchy nori cracker. All in all, it was a definite hit and a great way to whet your appetite if you weren’t already licking your lips from reading the menu.

One thing I should note: I can’t remember if the price includes two or three pieces. We may have added a third since there were three of us.

Another huge hit was the Beef Tongue – kimchi, cucumber, poppy seed steam bun ($14). Again, this may only comes with two buns. We may have added a third. This was one of my favourite bites of the trip. The poppy seed studded bun added a nice textural contrast to the fluffy white bun and there was a great filling-to-bun ratio. The tender slices of beef tongue were paired with kimchi, cucumber slices for some freshness, scallions and sesame seeds. The perfect bun!

The last dish we ordered from the snack section of the menu was the Duck Liver Toast – jalapeno, pickled pineapple ($11). It consisted of a smooth and silky duck liver mousse spread on a thick piece of brioche. There were sliced jalapenos on it for pops of spiciness and the pickled pineapple added a nice sweetness. It was a good dish but the least memorable one of the evening. It just wasn’t very exciting.

Up next was the Roasted Octopus – curried raisins, castelvetrano, butterball potatoes, fresh coriander ($18.25). The octopus was impeccably cooked and the fried potatoes were extra crispy, just the way I like ‘em. I love sweet and savoury combinations so the sweet bursts from the raisins paired with the briny olives were right up my alley. This dish doesn’t really shout “Hawaii’ as the ingredients were Mediterranean inspired but nevertheless, it was a damn good dish.

Roasted Octopus

Liholiho offers an off-menu House-made Spam on Rice dish (or ‘deconstructed musubi’ as our server called it). They also offer a fried rice on their menu which has bits of spam in it but this one consists of three thick slabs of straight-up spam on a bed of rice. The rice is topped with scallions, togarashi (Japanese chili powder) and furikake (a Japanese seasoning which contains dried fish, seaweed and sesame seeds). It’s not a fancy dish by any means (it’s like eating hot dogs on rice) but it’s super tasty and incredibly addictive – probably because of the generous amount of furikake used.

While we didn’t ball out and go for the nearly $90 wagyu, we did try the Whole Maine Lobster – preserved black bean sauce ($51). By the time this came out, we realized we had ordered way too much food for the three of us. I love black bean sauce and the lobster was cooked nicely but like the duck liver toast, it wasn’t as memorable as some of the other dishes we had this evening.

The last savoury dish to arrive was the Cornish Game Hen – cashews, tamari honey glaze, pineapple, broccoli ($37.25). Since Cornish hens can often be dry, I tend to stay away from ordering it but it came highly recommended from our friend who dines here often. Glad we listened since this was definitely some next-level Cornish hen. The pieces of hen were fried to perfection with an extra crispy skin coated in a sweet and sticky glaze. The best part? The meat wasn’t the least bit dry!

The hen was served with some ridiculously tasty broccoli. They had a nice char to them and the florets acted like sponges as they soaked up all that delicious sweet and spicy glaze. They should really consider selling this as a side vegetable dish. So amazing.

Liholiho has several tempting desserts on their menu but their most popular one is definitely the Baked Hawaii – caramelized pineapple ice cream, vanilla chiffon ($11). Our friend told us that the last few times he was here, they ran out of it so we made sure to reserve one in advance since we had a late dinner reservation.

As you can guess, the Baked Hawaii is their take on the baked Alaska, a dessert made with ice cream, covered in meringue and baked for a short period of time – the meringue acts as insulation preventing the ice cream from melting. I’m not the biggest fan of baked Alaska’s but this was a winner for me. Not only was it beautifully presented but I loved the pineapple ice cream and the short bread crust.

After a gluttonous meal at Liholiho, I totally get the hype. Sure, the food may not be traditional Hawaiian fare but that doesn’t detract from the experience at all. The food was excellent and with an extensive menu with dishes I’d still love to try, I wouldn’t hesitate to come back. For those just looking for some drinks and small bites to eat, their basement bar, Louie’s Gen-Gen is also a must.

One definitely feels the island welcome starting with the “Aloha,” spelled out in blue tiles on the white tiled floor, as you enter or leave the restaurant. Try to snag a reservation before you arrive or the wait could be long during peak hours. My party of 5 had a reservation made weeks in advance and was seated in a booth with a prime view of the open kitchen where Kapur worked his magic.

For dessert, the baked Hawaii with caramelized pineapple ice cream and vanilla chiffon is their signature dish. The size was good for our group to share, but may be too sweet or rich for only 1-2 people.

Earlier this summer, LYC also opened in its basement Louie’s Gen-Gen Room, a reservation-only bar that serves tropical cocktails and a separate bar bites and waffles menu.

Hawaiian Food San Francisco

Rarely do you find a serious commitment to Hawaiian cuisine outside of the Hawaiian islands. However, at Liholiho Yacht Club in the San Francisco Tendernob, Hawaiian-born chef Ravi Kapur and wife April Dawn Storm demonstrate a firm grasp and even feature off menu SPAM.

Blue on white “aloha” tiles greet guests at Liholiho Yacht Club. The space contains a deft mix of smooth coat and brick, skylights, open kitchen, wood booths from front to back, and a black steel bar backed by a joyous black-and-white photo of chef’s smiling mother.

An off menu bowl at Liholiho Yacht Club features thick cut, house-made “SPAM” crafted with pork shoulder and ham that carries the texture of mortadella. According to the late Josh Ozersky’s Esquire article that examines the dish in depth, the result is “seared brown on a flat plancha griddle and glazed under the broiler with tamari, brown sugar, and sesame oil.” Three slabs arrive on flavorful furikake rice with scallions, shichimi togarashi, and squiggles of spicy yellow aioli made with tamari, Sriracha, and sesame oil. House pickles pack tart topside punch.

It's hashtagged all over Liholiho's Instagram feed and encapsulates the exuberant spirit of Kapur's cooking. So does his quintessential dish: tuna poke with spicy mayo, sesame oil and crispy battered-and-fried nori crackers.

As the owner of San Francisco's Liholiho Yacht Club and Good Good Culture Club , two restaurants that thoughtfully draw inspiration from his Hawaiian upbringing, 2016 F&W Best New Chef Ravi Kapur is uninterested in stereotypes about the island’s food and culture.

“In 2018, I had an uncle pass at his home in Maui, and the night before the funeral, my family and I were just decompressing with tropical drinks and beers by the pool,” he says. “My palate got exhausted from these delicious but very sugary, kind of cloying drinks.” Kapur realized that the sweet, tropical drinks many people associate with Hawaii failed to properly showcase the island’s indigenous ingredients.

After several rounds of testing back, Kapur fell in love with a vivid, bright yellow combination of ginger- and turmeric-infused vodka. He named the spirit Olehna , which mimics the Hawaiian word for turmeric .

Olehna is the star in this eye-catching cocktail, where it beautifully balances the flavors of turmeric and ginger without being overly bitter. The Seven-Spice Mix features warming spices such as star anise, cloves, and cinnamon plus black peppercorns, which enhance the spiced notes of the botanical spirit. Finally, Szechuan peppercorns add a satisfying tingly sensation to the bittersweet cocktail.

Frequently Asked Questions

Olehna isn’t sweet, nor is it a liqueur. At 80 proof, it packs a boozy punch similar to gin or vodka. Kapur likes to use it in place of gin to make a Negroni, but also reaches for it to surprise and delight martini drinkers and it also shines in a simple spritz. At Liholiho Yacht Club, it’s the visual and flavor star of the Ginger Sunset cocktail, which also includes Japanese vermouth and ginger liqueur.

The seven-spice mix can be stored in an airtight container at room temperature up to 1 month. Spiced honey can be stored in an airtight container in the refrigerator for up to 1 month. Leftover seven-spice mix can be used as a rub for pork and poultry — especially ribs and chicken wings — or sprinkled into stir-fries.

Notes from the Food & Wine Test Kitchen

Store-bought five-spice powder can be substituted for the seven-spice mix. You can find it at most grocery stores.

1 star anise pod

1 teaspoon fennel seeds

3/4 teaspoon Szechuan peppercorns

1/2 teaspoon peppercorns

1/2 teaspoon ground cinnamon

1/2 teaspoon whole cloves

1/2 teaspoon coriander seeds

Spiced Honey

1/2 cup boiling water

1/2 cup honey

1/4 teaspoon Seven-Spice Mix

Bee Keeper Cocktail

2 ounces Olenha spirit

1 ounce fresh lemon juice

1/2 ounce Spiced Honey (see above)

3 dashes Angostura bitters

Make the Seven-Spice Mix: Heat star anise, fennel seeds, Szechuan peppercorns, black peppercorns, cinnamon, cloves, and coriander seeds in a small skillet over medium, stirring constantly, until fragrant and toasted, about 2 minutes. Transfer to a spice grinder; process until finely ground, about 30 seconds. Set aside.

Make the Spiced Honey: Stir together 1/2 cup boiling water, honey, and seven-spice mix in a medium-size heatproof bowl until combined, about 30 seconds. Let cool to room temperature, about 30 minutes.

Make the Bee Keeper: Fill a cocktail shaker with ice, and add Olehna, lemon juice, and spiced honey. Cover and shake well until chilled, about 20 seconds. 

Strain into a chilled rocks glass with a large ice cube. Garnish with Angostura bitters.
